I am a daughter,sister,wife,mum & nan.I have 3 wonderful children & 2 very precious grandchildren.I am always inspired by my family & one of my loves is baking& I love to bake for them.

Baking is therapy for the soul.....lol

Lemon cupcakes with lemon buttericing !!!



Made these today because I was too lazy to make a warm desert.....lol.

Had a full house for dinner ( usual sunday) so I was lazy when it came to thinking up a desert....lol






The usual recipe of......

8oz Plain Flour
8oz Caster sugar
8oz Real butter
1 Tsps of madagascar vanilla
4 Free range eggs
2 Tsp of baking powder
Zest of 1/2 a lemon

Method...
Beat butter until pale in colour
Add sugar & beat for 5 mins
Add eggs one by one & then add vanilla beat slowly,add zest of lemon.
Combine flour & baking powder together & sift into bowl,mix very slowly for
2 minutes only.
Scoop into your cases & bake at 155 in a fan oven for 15 min

Cupcakes with white chocolate :)



Collected Darragh from school today & he wanted to bake some cakes so we made Chocolate cupcakes with chocolate buttericing & white chocolate decoration :)

We started with the basic chocolate cupcake mix  ( feeling of dejavu typing this ....lol)

Basic recipe for the cupcakes

8oz Plain Flour
8oz Caster sugar
8oz Real butter
1 Tsps of madagascar vanilla
4 Free range eggs
1 1/2 Tblsps organic Green & Blacks Cocoa powder
2 Tsp of baking powder



Method...

Beat butter until pale in colour
Add sugar & beat for 5 mins
Add eggs one by one & then add vanilla beat slowly
Combine flour,cocoa & baking powder together & sift into bowl,mix very slowly for
2 minutes only.
Scoop into your cases & bake at 155 in a fan oven for 15 min



Scoop out the centre of the cupcake



Using a large icing bag ( I made 48 so had lots of icing...lol) & a Wilton 2A icing tube



Pipe the icing into the centre & up on top of the cake in a small swirl motion...




Drizzel white chocolate over the cake & Voilla good enough to eat....lol

Halloween Party cake & cupcakes :)


Yes did some baking for 2 partys this week & we a party at home also,had a great weekend with family & friends :)

Firstly I made a cake for a party at work,didn't take pics of making the fondant decorations as I just didn't have time :(

Here is the cake,I was very pleased with it,sorry about the sheen but I was just after steaming the fondant to get rid of any sugar bits ......lol




I also made some caramel filled cupcakes,I used the basic chocolate cupcake mix..

basic recipe for the cupcakes

8oz Plain Flour
8oz Caster sugar

When the cakes cooled I scooped a little of the centre out ......





Then I filled with Caramel ....



Then I iced with chocolate buttericing to which I added a little coffee to bring out the flavour a little more :)



The I made plain chocolate cupcakes & added icing & decorations :)



Made vanilla cupcakes & decorated with orange icing also :)
Again the basic cupcake mix omitting the chocolate :)

Pumpkin Cupcakes :)



I made these for Darragh to take over to his cousin Charlies house because tonight was their sleepover :)

For the pumpkins I used a candy mold ,I added orange Wilton candy colour ..

 Then I used the black & green Wilton colour from this set to paint on the faces & leaves :)




I used a basic recipe for the cupcakes which made exactly 36......lol

12oz Plain Flour
12oz Caster sugar
12oz Real butter
1 &1/2 Tsps of madagascar vanilla
6 Free range eggs
2 Tblsp organic Green & Blacks Cocoa powder
3 Tsp of baking powder

Beat butter until pale in colour
Add sugar & beat for 5 mins
Add eggs one by one & then add vanilla beat slowly
Combine flour,cocoa & baking powder together & sift into bowl,mix very slowly for
2 minutes only.
Scoop into your cases & bake at 155 in a fan oven for 15 mins..


Add a little chocolate butter icing so you can place the pumpkin on the cakes firmly...



Voilla Pumpkin cupcakes for all the family to enjoy :):)




  Ready to leave home.....lol



The one that got away was truly deliciously moist ;)

HALLOWEEN COOKIES

No it is not a typo,yes today I baked Halloween cookies with my grandson just because he bought the cutters yesterday....lol.
Being the crazy grandmother I am I agreed & learned much in the process......Example that yes I can finally make cookie dough,do not attempt to decorate without outlining first.....lol.Little lessons but hugely valuable :):)


 Firstly I had my little chef onboard & finally allowed him to use the mixer for the first time,in his words " Being 5 is all about learning & how can I learn if you don't allow me Nanny" well what can I say I allowed him & he is well capable :):)


 Picture of our perfect cookie dough,maybe the fact that a 5 yr old made it with me might have something to do with it being perfect....lol


Rolled out & ready to chill for 2 whole hours,we baked cupcakes whilst we waited ;)




 Finally chillin time was up & we got to cutout the cookies :)




 Finally baked & outlined after lesson learned....lol
